Spicy Steamed Pei Mussles

These mussels are easy to make and SO flavorful! A great appetizer to share or a meal to yourself with some toasted bread for dipping.
Ingredients:
2 tbs olive oil
2 tbs butter
5 garlic cloves, crushed
1/2 cup water
1 tbs tomato paste
2 roma tomatoes, diced (or a handful of cherry tomatoes diced)
1 tsp dried basil
1/2 tsp red pepper flakes
1 lb mussels
1 tbs diced fresh oregano
kosher salt and pepper, to taste
1 lemon, juiced
Directions:
1. Saute the garlic in the olive oil and butter over medium heat until the garlic is browned.
2. Stir in the water, tomato paste, tomatoes, basil, and red pepper flakes
3. Bring to a simmer.
4. Add mussels.
5. Sprinkle with a pinch of salt and pepper and the chopped oregano
6. Cover immediately and let simmer until mussels have opened (about 3-5 minutes)
7. Squeeze the juice of one lemon over the mussels
8. Pour all of the mussels and juices into a large serving dish and serve immediately
9. Enjoy with toasted bread for dipping
10. Note: Be sure to use fresh mussels. Clean and debeard them first.
11. If any of the mussels are open prior to cooking them- tap on them, if they do not close up, they are dead and you need to throw them away.
