Spicy Split Pea and Sausage Soup

A delicious and satisfying soup. I use Healthy Ones Skinless Smoked Sausage that has per 2 oz serving only 2 grams of fat and only 80 calories. Sauteed with the garlic, it has a great flavor in the soup and is really healthy. If you don't like things spicy, replace the jalapeno with bell pepper.
Ingredients:
4 cups dried split peas or 2 (16 ounce) packages split peas
42 ounces low-fat sausage, sliced
2 tablespoons olive oil
2 carrots, diced
2 onions, diced
6 hot banana peppers, diced
1 bulbs of garlic, pressed or 8 -10 garlic cloves
1 bunch celery, sliced
16 cups water
4 bay leaves
4 sprigs fresh thyme
salt, to taste
black pepper, to taste
Directions:
1. Saute sausage in olive oil til almost browned, add garlic and saute for a couple of minutes. Remove and set aside.
2. Saute vegetables for 10 or 15 minutes.
3. Add water, spices, lentils, sausage and garlic. Bring to a boil and simmer for 30 to 40 minutes or until lentils are tender.
4. Remove bay leaf and thyme.
5. Serve with crusty bread.
