Just a change from bread and saving on time and energy these cookies are versatile - can be topped with tomato & cheese and put under the griller or broken up into croutons for your favorite soup. Cut the biscuit sizes to suit.
Ingredients:
1 cup gluten free sr flour
1/4 small teaspoon ground hot chillies
1/2 teaspoon iodised salt
1 tablespoon dry soy drink powder
1/4 cup grated parmesan cheese
1/4 cup dry soy protein soaked in 3/4 cup hot water (set aside until cooled)
1 wholegrain mustard
3 tablespoons peanut oil or similar
Directions:
1. Combine first 5 ingredients
2. Add the Mustard and Cheese
3. Add the Soy mix and stir until dry ingredients are moistened
4. Spread the dough and flatten to 1/2 inch thick onto an oiled shallow baking tray for a texured look or roll the dough out for smooth cookies.
5. Bake in oven 420 deg for 15-20 mins until just colored.
