This is a delicious and very filling soup not to be missed.
Ingredients:
8 oz french beans (halved)
2 red onions (sliced)
4 carrots (cut into strips)
8 oz tomatos (peeled, de-seeded and chopped)
2 tbls olive oil
2 cloves garlic (crushed)
2 tsp oregano
3 tbls tomato puree
5 pints chicken stock
2 green chillies (chopped very small)
6 oz pasta shapes
4 tbls coriander
4 tbsp parsley
salt & pepper to taste
Directions:
1. Heat oil in a soucepan and fry onions, carrots, garlic & oregano for 5 minutes.
2. Add tomato puree, beans, tomatos & chicken stock.
3. Bring to the boil cover & simmer for about 1 hour or until veg is just tender.
4. Stir in chilli, pasta, coriander & parsley.
5. Simmer for 1/2 hour or until pasta is cooked.
6. Season to taste.
