I adapted this recipe from a Campbell's Soup can label. It is an easy meal for those busy nights. If you're like me and prefer lots of spice, kick up your picante sauce and add some fresh minced jalapeno peppers.
Ingredients:
1 lb medium shrimp, peeled and deveined
2 tablespoons lime juice
1 tablespoon vegetable oil (may also use smartbalance oil)
5 garlic cloves, minced
1 (14 1/2 ounce) can whole canned tomatoes, cut up
1/2 cup picante sauce
2 teaspoons chili powder
4 cups hot cooked brown rice
Directions:
1. Place shrimp in shallow dish and toss with lime juice to coat.
2. Heat oil in skillet. Add garlic and cook until tender.
3. Add tomatoes, picante sauce and chili powder. Heat to a boil then cover and cook over low heat for about 10 minutes.
4. Add shrimp to mixture and cook about 5 minutes longer or until done.
5. Serve over rice.
