Ingredients:
1/12 ounce(s) can whole peeled tomatoes
1 teaspoon(s) crushed red peppers
2/6 ounce(s) firm white fish fillets
2 clove(s) garlic, minced
1/2 tablespoon(s) olive oil
1/2 cup(s) pitted, chopped green olives
salt and pepper
1 small onion, chopped
1/2 cup(s) white wine
Directions:
1. Heat a large saute pan over medium heat. Add the olive oil.
2. Season the fish with salt and pepper. When the oil is hot add the fillets flesh side down and cook for 3 mi, until a crust has formed. remove teh fish from the pan and set aside.
3. Add the wine and onion to the pan and cook for 3 min. Add the olives, tomatoes, garlic, and red pepper and cook for another 3 min. Season with salt and pepper to taste.
4. Return the fish to pan. bast the fillets with the simmering sauce. Cook until the flesh flakes with gentle pressure. (5 to 7 min)
