Exotically spiced spinach that will add a kick to any meal.
Ingredients:
2 bunches spinach (about 1 pound after removing stems)
2 tablespoons butter
2 tablespoons olive oil
1 large onion, finely sliced
2 garlic cloves, finely chopped
1 teaspoon fresh ginger (finely grated)
1 teaspoon cumin seed
1/2 teaspoon black cumin seeds (optional)
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon ground turmeric
1 teaspoon chili powder
1 teaspoon salt
Directions:
1. Wash spinach well in several changes of cold water and remove the stems.
2. Heat the butter and oil in a large saucepan, saute the onion until golden, then stir in the garlic and ginger, and saute for an additional 1 or 2 minutes.
3. Add the seeds, ground spices and salt and mix well.
4. Toss in the spinach with only the water that remains on the leaves after washing.
5. Heat very low and cook, uncovered, stirring frequently, until the spinach is cooked (it may be necessary to add a little more water to prevent spinach sticking to pan).
