Spicy roast pork with sweet potatoes

Ingredients:
2 pound(s) boneless pork loin
4 teaspoon(s) coarse salt, divided
4 teaspoon(s) chili powder, divided
1 teaspoon(s) dried cilantro
1/4 teaspoon(s) ground cayenne
1/4 teaspoon(s) ground ginger
1/4 teaspoon(s) ground cumin
2 pound(s) sweet potatoes, peeled and cut into 1/2 inch thick slices
2 teaspoon(s) olive oil
Directions:
1. To marinate pork: Rub pork loin with 3 teaspoons salt and 1 teaspoon chili powder. Cover. Chill for a couple of hours or overnight. To roast pork: Preheat oven to 350 degrees. In small bowl, stir together remaining chili powder and salt with cilantro, cayenne, ginger and cumin. Set aside. Lightly coat large roasting pan with vegetable oil spray. Toss potatoes in oil, arrange in single layer in roasting pan, saving room in center of pan for pork. Generously rub spice mix over pork loin. Place in roasting pan. Sprinkle remaining mix- there shouldn't be much- over potatoes. Bake for 1 hour, or until pork's internal temperature is 160 degrees and potatoes are done.
