Spicy Potato And Spinach Sag Aloo

A simple take on an indian classic- whenever I make this there is never any left over!! I like to add fresh herbs on occasion to make it a little different.
Ingredients:
7-9 medium sized potatoes of your choice, cut into quarters
4 garlic cloves, chopped
1 teaspoon tumeric or cumin (or both)
1/2 teaspoon salt
1/2 teaspoon dried chilli/chilli poweder (or more if you like it hot!)
1/2 teaspoon mustard seeds
fresh spinach (it's up to you how much)
water for boiling
plenty of vegetable oil for frying
Directions:
1. Boil your potatoes until they are just cooked through but not soft.
2. while this is going on, chop garlic and measure out your herbs
3. heat the oil in a pan over a medium heat
4. add the garlic and spices
5. drain the potatoes once they are ready and put them in the pan as soon as the garlic begins to turn brown
6. turn up the heat a little!
7. once the potatoes are crisping up a bit, add the spinach. i like to cut it into ribbons first
8. as soon as the spinach has wilted, turn off the heat and serve immediately!
