Spicy Pomegranate Wings

This sweet and spicy marinade and glaze is quick to put together and works great for whole chicken wings, wing separates, thighs or even drumsticks!
Ingredients:
3lbs chicken wings, sections, or thighs or drumsticks(skin on)
12oz fresh pomegranate juice(check in the produce section
12oz spicy tomato sauce(if you don't like things too spicy, just use a regular tomato sauce)--i get this in the mexican section of larger supermarkets, or at the mexican market! it's just a spicy tomato sauce, often in smaller cans, like a lil less than 8oz, like this! http://lunchinout.files.wordpress.com/2011/08/el-pato.jpg w=200&h=200
several dashes of hot sauce or 1/2-1t cayenne
2t honey
2t fresh grated on dry minced onion
3 cloves garlic
juice from 1 lemon or 2 limes
kosher or sea salt and fresh ground pepper
Directions:
1. Combine all ingredients other than chicken in a medium bowl, and whisk to combine well.
2. Pour over chicken in x-large zipper bag or bowl with cover. Toss to combine.
3. Refrigerate about 1 hour or up to over night.
4. Remove chicken from bag and place on cooling rack over a foil covered cookie sheet(or use a roasting pan).
5. Bake at 350 for 30-40min(or more, depending on type of chicken used), or until internal temp is about 160.
6. Meanwhile, add remaining marinade to a medium sauce pan and heat to boiling. Boil about 7 minutes, stirring often.
7. Reduce heat to a medium simmer and simmer while chicken is baking, to create a thicker, basteable sauce.
8. When chicken is at 160 degrees, remove from oven and brush on remaining sauce.
9. Return to oven, increase temp to 400 and cook another 7 minutes or so, until sauce has heated and cooked to the chicken.
10. *please note, this marinade/sauce will get VERY dark but it isn't burnt! It has a nice, sticky, consistency and it's full of flavor. Judge the doneness by the chicken, not the color of the marinade. IF the darkness turns you off, cover the chicken for the first half of baking, then remove in the last 15 minutes or so, and for the final bake time.
