Spicy Peanut Sauce (For Noodles or Dipping)

I wanted a good peanut sauce and this is a hybrid of some i found from various sites. I love it with whole wheat spaghetti (or rice noodles), bean sprouts, bok choy, shredded carrots, seedless cucumber and chicken all tossed together.
Ingredients:
1/4 cup peanut butter (more for a stronger peanut taste)
1/4 cup water
1/4 cup soy sauce
2 tablespoons fish sauce
1 tablespoon chili-garlic sauce
2 tablespoons honey (can sub brown sugar)
3 garlic cloves, minced
2 teaspoons ginger (i use a paste from a jar but you could use fresh grated)
1 tablespoon sesame oil
2 tablespoons rice vinegar
1 lime, juice from
Directions:
1. combine everything in a small pot.
2. bring to a boil and simmer 3 minutes.
3. pour over pasta or use as a sauce for dipping.
