This aromatic bread goes well with tea or fruits. You may freeze it for use as needed. Thaw in the refrigerator and warm a little before serving. I usually add about a cup of any mashed fruit or grated vegetable to make more healthy.
Ingredients:
1/2 cup unsalted butter (4 oz.)
1 cup sugar
1/2 cup water
1 cup raisins
2 cups flour (mix of whole wheat & all-purpose)
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup plain yogurt
1/2 cup chopped walnuts (or pecans or almonds)
1/2 teaspoon crushed nutmeg
1/2 teaspoon cinnamon
1/2 teaspoon clove
1/2 teaspoon cardamom
Directions:
1. Heat the butter, sugar, water, raisins and the seasonings, until bubbly.
2. Let the mixture cool for about an hour.
3. Mix the flour, baking soda, baking powder and salt.
4. Beat the flour mix, yogurt, and the nuts into the cooled down liquid mixture.
5. Grease and flour a large loaf pan or a 9x9 baking dish.
6. Preheat the oven to 350°F.
7. Bake for 35 minutes until done.
8. Healthy Alternative: Substitute all or part of all-purpose flour by whole-wheat flour and some semolina.
9. Add some pureed fruit like apples or bananas to reduce fat and sugar.
