Spicy Leek Soup With Blue Cheese

A spiced version of leek & potato soup for a change. Serve with crusty bread.
Ingredients:
1 lb potato, peeled and cubed
1 1/2 leeks, shredded
1/2 teaspoon coriander seed
1/2 teaspoon curry powder
4 cups vegetable stock
2/3 cup milk
5 ounces blue cheese, crumbled
Directions:
1. Saute the peeled and cubed potatoand shredded leeks.
2. Add the coriander seeds and the curry powder, cook for 2 minutes.
3. Add the vegetable stock, bring to the boil and simmer for 15-20 minutes.
4. Puree, season and add the milk and the crumbled blue cheese.
5. Serve.
