Spicy Ham Salad

I concocted this salad when we found a huge chunk of ham in the freezer, left over from the last time I made a baked ham. We had lots of vegies that needed to be eaten, so it went from there. Two people who tried it said it was the best ham salad EVER. Read more . I sort of liked that. :) We ate that salad for three days, and each day it got better. I served it with plain toasted bagels.
Ingredients:
approx. 1.5 - 2 pounds baked ham, chooped
3-4 jalapeno peppers, seeded and chopped
4 stalks of celery, chopped, including the leaves
3-5 spring onions, both ends, sliced and chopped
1 green pepper, seeded and chopped
mayonnaise to taste
2 tablespoons brown mustard
2 spicy sweet pickles, chopped
black pepper, 1 teaspoon
dried parsley, 1 tablespoon - fresh might be better
Directions:
1. MIx all ingredients in a large bowl and allow to sit for an hour in the fridge before serving. This allows the flavors to blend. Then serve on toasted bread as a sandwich, or over lettuce as a salad.
