Spicy Gingerbread Loaf

A simple, spicy, dense gingerbread loaf that pairs well with cream cheese frosting or whipped butter. Adapted from Joy of Cooking recipe. Makes 1 large loaf or 3 tiny loaves.
Ingredients:
1/2 cup butter
1 egg
1/2 cup brown sugar
1/2 cup molasses
1/4 cup sugar
1 3/4 cups unbleached all-purpose flour
1 teaspoon baking soda
1 tablespoon ground ginger
2 teaspoons ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon salt (can be omitted if using salted butter)
1/4 cup warm water
3 tablespoons crystallized ginger (optional) or 3 tablespoons other dried fruit (optional)
Directions:
1. Preheat oven at 350.
2. Cream first 4 ingredients.
3. Mix in the dry ingredients.
4. Add hot water and crystallized ginger and stir until just combined.
5. Pour batter into greased baking pans.
6. Bake until a toothpick inserted into the center comes out clean, between 30 and 45 minutes.
7. Remove from the oven and let cool for at least 10 minutes before removing from the pan.
