Spicy Garlicky Chunky Guacamole

This spicy guacamole has a nice garlic flavor to it.
Ingredients:
2 ripe avocados
1 lime, juiced
1 large garlic clove, minced
2 serrano chilies, thinly sliced
1 tbsp. extra-virgin olive oil
1 scallion, sliced
1 tsp. kosher salt
1/4 tsp. freshly ground black pepper
1/4 tsp. red pepper flakes
1 tbsp. fresh cilantro, finely chopped
1 plum tomato (optional)
Directions:
1. Halve and pit the avocados. Scoop out the flesh with a spoon into a mixing bowl. Mash the avocados with a fork, leaving them somewhat chunky.
2. Heat oil in pan on low to medium heat. Cook the garlic and chilies together until they soften, but do not allow them to brown. Allow to cool.
3. Add lime juice, salt, black pepper, red pepper flakes, and garlic/chili mixture to avocados. Stir until ingredients are well blended.
4. Remove the seeds and juice from the tomato. Chop up the flesh of the tomato.
5. Fold in the scallion, tomato, and cilantro into the avocado mixture and stir gently.
6. Lay a piece of plastic wrap right on the surface of the guacamole so it doesn't brown.
7. Refrigerate at least 1 hour before serving.
