Low-GI chunky, filling omelette
Ingredients:
2 eggs
2 oz kidney beans
4 oz new potatoes, boiled
1/2 courgette, diced small
1 chili pepper, deseeded and finely chopped
2 spring onions, (scallions) chopped
1 tsp olive oil
1 tomato, chopped
1/2 oz cheese
Directions:
1. Whisk the eggs in a bowl and add the chili pepper, beans, spring onions and tomato
2. Heat the olive oil in a small non-stick frying pan
3. Slice the potatoes and add to the pan with the courgette. Saute for a few minutes allowing them to brown a little
4. Pour the egg mixture over the top and spread evenly, tipping the pan to bring runny pools of egg to the edges
5. When set, sprinkle on the cheese, place the pan under a hot grill and cook until bubbling and golden
6. Serve in thick wedges either hot or cold
