Spicy Fried Brussels Sprouts

We're southern...we fry everything! ;) In this case, tender, small Brussels sprouts are quick fried then tossed with a tangy, spicy dressing for a new way to try an old favorite...or a NOT so favorite. :)
Ingredients:
2lbs small brussels sprouts, trimmed and cut in half
1/4 cup butter, melted, or, can sub 1/4 cup salad quality olive oil
juice from 2 lemons
1t honey
1-2t sirracha(also known as rooster sauce , or, sub your favorite hot sauce)
1/2-1t red pepper flakes
3 cloves garlic, minced
kosher or sea salt and fresh ground black pepper
peanut or olive oil for frying
Directions:
1. Heat about 1 inch of oil in large, heavy pan or skillet.(I used cast iron)
2. Meanwhile, whisk together butter, lemon juice, honey, Sirracha, red pepper flakes garlic, and a lil salt and pepper in large bowl, until combined, then set aside.
3. Fry sprouts in batches in 350 oil just for about 2 minutes or so each side. They will turn a beautiful golden brown.
4. Set on paper towels or brown paper bags to drain while finishing the rest. The oil shouldn't cool down too much, since you are frying so quickly, but it's important to not let it get too hot, either. So, watch your temp, and keep it right around 350.
5. When all are fried and drained, toss with the dressing, sprinkle with a lil more salt and pepper and serve immediately.
6. Don't worry, though, if these aren't steaming hot, they were good at room temp...the dressing is full enough that it made this almost like a fried sprout salad :)
7. **During frying, some of the outer leaves will fall off into the oil... get them out quick, but don't discard them... just add 'em to the dressing, too...or, just munch on those while you're finishing the dish...they are crispy and delicious. :) Don't leave them in the oil, though, cus they will burn quickly.
