Spicy Couscous With Mushrooms

A spicy way to serve couscous.
Ingredients:
3 tablespoons butter
1 cup couscous, plus
3 tablespoons couscous
1/2 teaspoon turmeric
1/2 teaspoon coriander
1 small cinnamon stick
2 cups vegetable stock or 2 cups chicken stock
1/2 lb mushroom
1/2 teaspoon salt
1/2 teaspoon cumin
1 star anise
1 bunch chives, chopped
Directions:
1. Melt butter in a saucepan, add mushrooms, cover and cook until soft.
2. Stir in couscous, salt, turmeric, cumin, coriander, anise, cinnamon and chives.
3. Cook for 1-2 minutes.
4. Pour vegetable stock over the mixture, cover and set aside for 5 minutes until the liquid is absorbed.
5. Fluff up and serve.
