Spicy Corn And Radish Salad

This is a quick, colorful salad perfect for picnics and barbeques. Try not to make it more than a couple hours in advance, though, or the beautiful red of the radish will bleed.
Ingredients:
1 15 oz can yellow whole kernel corn
1 bunch radishes
1/2 c fresh coriander leaves
1-2 fresh jalapeno peppers, to taste
1/4 c fresh lime juice
1/4 c olive oil
salt to taste
sugar (optional)
Directions:
1. Drain the corn, and scoop the kernels into a serving bowl.
2. Thinly slice the radishes and add them to the corn.
3. Finely chop the coriander, and scrape it into the serving bowl as well.
4. Wearing gloves, finely mince the jalapeno(s), and add them to the vegetables. (To reduce the heat level further, discard the seeds.)
5. Pour lime juice and olive oil into a jar. Shake well to emulsify.
6. Dress the corn and radish mixture with the lime vinaigrette. Mix well.
7. Season with salt. If the corn is not very sweet, add a pinch of sugar, as well.
8. Serve as soon as possible.
