Spicy Chipolte Texas Chili

A spicy no-bean Texas style chili with depth of flavor that gets better each day.
Ingredients:
1 1/2 lbs ground beef (organic tastes best)
2 sweet italian sausage links
1/2 red onion, diced
1 teaspoon garlic paste
1 tablespoon olive oil (california preferred)
1 (14 1/2 ounce) can diced fire-roasted tomatoes (like muir glen organic)
1 (7 ounce) can chipotle chiles in adobo, diced (like goya)
5 pieces roasted red peppers, diced (jarred)
1/2 teaspoon ground coriander
1 teaspoon ground cumin
1/2 teaspoon ground cinnamon
1/4 teaspoon red pepper flakes
1/4 teaspoon cayenne pepper
2 teaspoons garlic salt
fresh ground black pepper
cheddar cheese (optional)
green onion (optional)
sour cream (optional)
corn chips (optional)
Directions:
1. Remove sausages from casings and lightly fold into beef, browning all meat 3-5 min or until just cooked, drain off excess fat and set aside. Cook the onions in the oil over medium-low heat for 5-7 minutes or until translucent. Add the garlic paste and cook for 1 more minute. Then add all remaining ingredients and add meat. Bring to a boil, then reduce the heat and simmer, uncovered, for 20 minutes, stirring occasionally.
