Spicy Butternut Squash Soup

Title says it all!
Ingredients:
2 butternut squash, peeled, halved and deseeded.
1 tsp ground chillie
1 tsp ground coriander
1 tsp ground nutmeg
pinch of salt and pepper
1/4 cup of extra virgin olive oil
2 pints of vegetable stock
Directions:
1. Preheat oven to 180 C/350 F.
2. Chop butternut squash into chunks and place on a roasting tray.
3. Drizzle of the olive oil over squash.
4. Combine all the spices and sprinkle over squash, toss so that all the squash is covered.
5. Bake for aprox 45 to 50 mins, until squash is browned and soft.
6. Boil vegetable stock and add the squash making sure you also add the spices from the baking tray.
7. Simmer for 15 mins.
8. Puree in food processor.
9. Enjoy with your favourite bread.
