Spicy Black Bean Corn And Jicama Salad

This is a great salad to go along with any Tex-Mex style meal. The cilantro makes this salad very refreshing.
Ingredients:
1 15 oz cans black beans
1 15 oz can corn
1 cup jicama, julienned
2 plum tomatoes, seeded and chopped
1 handful cilantro cleaned, dried, and chopped
1 lime, juiced
1/4 cup extra virgin olive oil or vegetable oil
2 cloves garlic, chopped
1 jalapeƱo, chopped
1 teaspoon honey, sugar or splenda
salt, black and/or red pepper to taste
Directions:
1. Drain and clean the black beans and corn
2. Add jicama, tomatoes and cilantro
3. In a separate container, mix the remaining ingredients
4. Add dressing to salad and chill before serving.
