Spicy Black Bean Chili

A spicy, hearty chili that can be made with meat or simply go vegetarian
Ingredients:
3 pounds black beans, dry
2 quarts water
1 1/2 cups onions, chopped
1/2 cup green pepper, chopped plus 1/4 cup green pepper, chopped
2 tablespoons chipotle chili powder
1 tablespoon salt
1 tablespoon black pepper
4 cups chili sauce (heinz)
1/4 cup red pepper, chopped
1 cup tomatoes, diced
3 tablespoons chili powder
4 tablespoons cumin
2 teaspoons lime juice
1 bunch cilantro, chopped
4 cups vegetable stock or use beef stock if adding meat
2 pounds browned ground beef (optional)
Directions:
1. Boil the black beans in water with onions, 1/2 cup green peppers, salt and pepper.
2. Add additional water if needed
3. Cook beans until slightly tender, about 1 hour.
4. Add the 1/4 cup green pepper and remaining ingredients, and ground beef (if using).
5. Simmer for about an hour. Add water or stock as necessary for consistency.
