SPICY BEEFY STUFFED ZUCCHINI This recipe came from an estate sale. I obtained it when I purchased the family collection from the Devine Estate in Brenham, Texas in 1991.
Ingredients:
1-1/2 pounds lean ground beef
1 large white onion chopped
1 large green pepper chopped
1 jalapeno pepper chopped
1 jalapeno pepper minced
1-1/4 cups soft bread crumbs
1 egg beaten
1 tablespoon dried parsley
1 teaspoon dried basil
1 teaspoon italian seasoning
1 teaspoon salt
1/8 teaspoon freshly ground black pepper
16 ounces canned tomato sauce divided
2 medium tomatoes coarsely chopped
4 medium zucchini
2 cups mozzarella cheese shredded
Directions:
1. In large bowl combine the first 11 ingredients and one can of tomato sauce and mix well.
2. Stir in tomatoes then halve zucchini lengthwise and scoop out seeds.
3. Fill with meat mixture and place in two rectangular baking dishes.
4. Spoon remaining tomato sauce over each then bake uncovered at 375 for 45 minutes.
5. Sprinkle with cheese during the last five minutes of baking.
