Spicy Banana Pockets (Vegan)

Ingredients:
1 (12 ounce) package wonton wrappers
1 cup mashed banana
1/4 cup grated coconut
1/4 cup minced onion
2 minced garlic cloves
1 tablespoon grated ginger
1 tablespoon chili-garlic sauce
soy sauce and rice vinegar
1 teaspoon mint
1 teaspoon basil
1 teaspoon cilantro
1/2 teaspoon minced lemongrass
1 jalapeno, sliced into rings
1 teaspoon sugar
1 teaspoon garam masala
1 tablespoon peanut oil
3 tablespoons shredded carrots
frying oil
Directions:
1. Mix all but the wrappers and frying oil together.
2. Place a dollop of this stuff on a wrapper, roll it up nice and tight and fry them in oil (doesn't have to be super deep if you turn them!) until browned all about.
3. Serve with hoisin or black-bean garlic sauce and some chili sauce.
