Spicy Bacon & Tomato Brunch

Ingredients:
1 teaspoon ginger
1 large onion, peeled and minced
4 garlic cloves, peeled and finely minced
1 (15 ounce) can plum tomatoes, with juice
6 slices bacon
salt
pepper
toast
Directions:
1. Cut the bacon into small strips and add to saucepan.
2. Cook over medium heat.
3. Finely chop the onion and garlic; add to saucepan and fry with ginger until soft and translucent (not brown).
4. When vegetables are cooked, open tomatoes and cut into small pieces; add tomatoes and juice to saucepan with salt and pepper.
5. The secret of this recipe is to keep cooking over a medium heat, stirring occasionally, until the tomato juice has reduced to a thickish sauce.
6. When desired thickness is reached, serve on toast - it certainly wakes those taste buds up.
