THis is a very healthy recipe for those watching what they eat. Use Chicken Tenders abd Turkey sausages in stead if high fat pork,brown rice instead of white rice,the peppers and tomatoes will offer about 1.2 the daily vitamin C needed. Read more .and its a one sklllet dish.
Ingredients:
8 oz.turkey andouille sausage,sliced 1/4 in thick
1 each green and yellow pepper,chopped
1 can 14.5 oz stewed tomatoes
1c uncooked instant brown rice
8 oz chicken tenders,cut crosswise in half
1 bunch green onions,sliced
1/2 cup water
1/4 tsp salt
Directions:
1. Heat 12 ins skillet on med until hot,add sausage and peppers, and cook 5 min stirring occasionally.
2. stir in tomatoes with their juice,rice,chicken,1/2 cup water and 1/4 tsp salt.
3. Heat to boiling on high
4. reduce heat to low;cover and simmer10 min or until rice is just tender.
5. remove skillet from heat;stir in green onions
