Spiced Two-Grain Pancakes

Ingredients:
1 cup milk
1 large egg
1/2 stick (1/4 cup) unsalted butter, melted and cooled
1 cup old-fashioned oats
1/4 cup plus 1 tablespoon packed brown sugar
3/4 cup all-purpose flour
1/4 cup toasted wheat germ
1 teaspoon baking soda
1 1/4 teaspoons ground ginger
1 1/4 teaspoons ground cinnamon
a scant 1/2 teaspoon ground cloves
1 teaspoon salt
vegetable oil for brushing griddle
accompaniment: pure maple syrup, heated
Directions:
1. In a blender blend all pancake ingredients except oi until just combined.
2. Heat a griddle over moderate heat until hot enough to make a drop of water scatter over surface and brush with oil. Working in batches, drop scant 1/4-cup measures of batter onto griddle to form pancakes about 4 inches in diameter and cook until bubbles appear on surface and undersides are brown, about 2 minutes. Flip pancakes with a metal spatula and cook until undersides are golden brown and pancakes are cooked through, about 2 minutes.
3. Serve pancakes with syrup.
