Spiced Turkey Wraps (Leftover)

Use leftover turkey for these tasty wraps. Serve with a crisp side salad.
Ingredients:
1 large ripe avocado
2 tablespoons lime juice
3 tomatoes, deseeded and chopped
1 small red onion, cut into wedges
1 tablespoon sunflower oil
3/4 lb leftover turkey, cooked, cut into strips
2 ounces cajun seasoning
7 tablespoons sour cream
2 1/2 ounces sharp cheddar cheese, grated
4 flour tortillas
Directions:
1. Preheat the broiler. Halve the avocado, scoop out the flesh and mash with the lime juice. Stir in the tomatoes and red onion.
2. Broil the flour tortillas to warm through. Meanwhile heat the oil in a frying pan and stir-fry the turkey and Cajun seasoning over a high heat for 2-3 minutes.
3. Spread each tortilla with the avocado mix, turkey, soured cream and grated cheese – roll up and serve immediately.
