Spiced Tomato Rice

A tasty alternative to plain boiled rice.
Ingredients:
12 ounces long grain rice
1/2 quart vegetable broth
7/8 cup tomato sauce
1 teaspoon ground cumin
1 teaspoon chili powder
1 ounce flat leaf parsley, chopped (optional)
Directions:
1. Place the rice in a pan with the broth and tomato sauce. Bring to the boil, cover and simmer for 10-12 minutes.
2. Take off the heat, stir in the cumin and chili powder, then cover and rest for 5 minutes.
3. Fluff with a fork and serve scattered with the parsley if using.
