Spiced Spinach With Yogurt

Ingredients:
1 teaspoon extra virgin olive oil
2 -3 garlic cloves, crushed
2 teaspoons grated ginger
1 teaspoon ground coriander
1 teaspoon ground cumin
1 lb spinach, washed and trimmed
1/2 cup yogurt
1/8 teaspoon nutmeg
sea salt
fresh ground black pepper
2 tablespoons walnuts or 2 tablespoons pine nuts, toasted and chopped
Directions:
1. Heat oil in large nonstick saucepan over medium-high heat. Add garlic and ginger. Cook 1 minutes. Stir in coriander and cumin.
2. Add spinach and cook until just wilted, about 2-3 minutes Remove from heat.
3. Stir in yogurt and nutmeg. Season with salt and pepper. Serve.
