Ingredients:
2/3 cup uncooked long grain rice
1 1/4 cups water
3/4 cup chopped onion
1 1/2 teaspoons olive oil
1 1/2 teaspoons honey
3/4 cup reduced-sodium chicken broth
1/4 cup golden raisin
1 teaspoon curry powder
1/4 teaspoon salt
1/4 teaspoon ground cumin
1/4 teaspoon ground cinnamon
1/4 cup chopped red bell pepper
Directions:
1. Bring rice and water to a boil. Reduce heat and simmer until water is absorbed.
2. Saute onion for 1 minute. Add honey and cook 2 minutes longer. Stir in the broth raisins, curry, salt, cumin, and cinnamon. Bring to a boil. Reduce heat; simmer, uncovered, 5 minutes. Stir in red bell pepper and rice until well blended and rice is heated through.
