This recipe was intended to be a pound cake but I tweaked it and made a layer cake.
Ingredients:
1 cup butter- softened
2 cups white sugar
5 eggs-room temperature
2 tablespoons orange zest
1 tablespoon orange extract
1 teaspoon vanilla extract
1 cup sour cream-room temperature
1 1/2 cups buttermilk-room temperature
3 cups sifted cake flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons ground nutmeg
1 1/2 teaspoons ground ginger
frosting
1 8oz block cream cheese-softened
1/4 cup butter-softened
1 teaspoon orange extract-optional
1 pound powdered sugar
Directions:
1. Preheat oven to 325 degrees.
2. Grease and flour 4 standard (9 x 1 1/2 ) round cake pans, 3 deep(9 x 2 ) round cake pans, or one 12-cup bundt pan. Set aside.
3. In a large mixing bowl, cream butter and sugar until fluffy.
4. Add eggs one at a time, mixing well after each addition.
5. Add zest, extracts, and sour cream. Mix on medium speed for 5 minutes.
6. Combine dry ingredients and add to butter mixture alternating with buttermilk beginning and ending with flour. Mix until just combined after each addition.
7. Pour batter into prepared pans
8. Bake 30-35 minutes or until inserted toothpick comes out clean.
9. Cool in pan(s) for 10 minutes then turn out onto cooling rack to cool completely.
10. Frosting:
11. Mix cream cheese, butter, and extract until creamy.
12. Gradually add sugar until all is combined.
13. Turn mixer to high and whip for 2 minutes.
14. Frost cake.
15. Store leftovers in refrigerator.
