Spiced Granola

For breakfast or with fruit and yoghurt
Ingredients:
6 cups of oats
1/3 cup sunflower seeds
1/4 cup sesame seeds
1/3 cup walnuts
1/3 cup sugar
2 tbsp golden syrup
3 tbsp flax meal
3 tsp mixed spice
1 tsp almond extract
Directions:
1. Mix oats, seeds and nuts (not flax) in a large bowl.
2. In small pan combine sugar, golden syrup and oil with 2/3 cup water. Bring slowly to a boil then boil hard for 2 minutes. Add almond extract and combine with the oats.
3. Spread over a lipped baking pan and bake at 180 * for 15 minutes. Stir well and cook for another 10 minutes. If necessary cook for another 10 minutes.
4. Whilst still hot stir in spice and flax.
5. Leave to cool completely and store in an airtight container.
6. 1 serving = 1/3 cup.
