Mix Strawberries, grapefruit and orange segments, pomegranate seeds, and dried Goji berries with a lightly spiced syrup of orange juice, maple syrup, cinnamon, ginger and other spices. It's delightfully different on yogurt or over cake or ice cream.
Ingredients:
0.5 (300 g) bag europe's best sliced country strawberries, frozen
2 grapefruits, peeled, cut into segments
3 oranges, peeled cut inot segments
1/3 cup pomegranate seeds
1/4 cup dried goji berries or 1/4 cup cranberries
1/3 cup orange juice
1/4 cup maple syrup or 1/4 cup honey
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1 pinch ground cloves
1 pinch nutmeg
2 tablespoons chopped pistachios (optional) or 2 tablespoons slivered almonds (optional)
Directions:
1. Place Europe's Best Sliced Country Strawberries in a serving bowl. Let defrost while preparing grapefruit and oranges. Add grapefruit and orange segments, pomegranate seeds and berries. Toss gently to combine.
2. In a bowl, whisk together juice, syrup, cinnamon, ginger, cloves and nutmeg. pour over fruit. Let stand for 30 minutes or up to two hours. Garnish with chopped pistachios.
3. TIP: Goji berries are available, dried, in supermarkets, health food stores and bulk food stores. They add a slightly tart flavor to dishes. Use in fruit and vegetable salads, soups, cereal and trail mix.
4. Extra pomegranate seeds can be frozen for use in salads, beverages and garnishes.
