Spiced Fillet of Trout

Ingredients:
4 (6-ounce) trout fillets
1 tablespoon olive oil, divided
1/8 teaspoon salt
1/8 teaspoon black pepper
1 cup fresh breadcrumbs
1 teaspoon curry powder
1 teaspoon chili powder
1 teaspoon pumpkin-pie spice
1/4 teaspoon dried thyme
1/4 teaspoon ground red pepper
1/4 teaspoon ground nutmeg
watercress sprigs (optional)
Directions:
1. Preheat oven to 450°.
2. Place fillets on a baking sheet. Lightly brush fillets with 1 teaspoon oil, and sprinkle with salt and black pepper. Combine breadcrumbs and the next 6 ingredients (breadcrumbs through nutmeg) in a small bowl. Pat the breadcrumb mixture onto fillets, and drizzle 2 teaspoons oil evenly over fillets. Bake at 450° for 8 minutes or until fish flakes easily when tested with a fork. Garnish with watercress sprigs, if desired.
