Ingredients:
1 cup butter, softened
1-1/2 cups sugar
1 egg
1 tablespoon molasses
3-1/4 cups king arthur unbleached all-purpose flour
1 tablespoon ground cinnamon
1 tablespoon ground ginger
2 teaspoons ground cardamom
2 teaspoons ground cloves
2 teaspoons baking soda
1/4 cup orange juice
1 tablespoon grated orange peel
Directions:
1. In a large bowl, cream butter and sugar until light and fluffy; beat in egg and molasses. Combine the flour, spices and baking soda; add to creamed mixture alternately with orange juice. Stir in peel.
2. On a floured surface, roll out dough to 1/16-in. thickness. Cut with a 2-1/2-in cookie cutter; place on ungreased baking sheets.
3. Bake at 350° for 6-8 minutes or until edges are lightly browned. Cool on wire racks. Yield: about 9 dozen.
