Spiced Cider Apple Crisp

Apple cider lends a little extra flavor to this apple crisp. Instead of the typical dredging in flour, sugar and spice, cider is whisked together with some flour and spices, then tossed with chopped apples and covered with a sweet, crunchy topping.
Ingredients:
6 cups apples, peeled, cored and cut into chunks or slices
1 1/4 cup apple cider
1 tbsp cinnamon
1/8 tsp nutmeg
1/8 tsp ground cloves
1/4 cup flour
1 tsp vanilla extract
1 cup quick oats
1/3 cup brown sugar
1 tbsp cinnamon
1/4 cup butter, cut into pieces
Directions:
1. Preheat oven to 350* F. Butter a 2-qt baking dish.
2. In saucepan, combine cider, 1 Tbsp cinnamon, nutmeg and cloves. Heat over medium-high heat and whisk in flour. Whisk constantly until mixture thickens and begins to boil. Remove from heat and stir in vanilla.
3. Pour cider mixture over apples and toss to coat. Pour into prepared baking dish.
4. Combine oats, brown sugar, 1 Tbsp cinnamon in small bowl. Add butter, and cut in with a fork, two butter knives or a pastry blender until evenly combined. Sprinkle over top of apples.
5. Bake for about 45 minutes or until apples are tender and topping is golden brown. Let sit 10 minutes before serving.
