Spiced Buttercup Squash Soup

Ingredients:

  • 1 buttercup squash , about 3 lb
  • 1 small onion, minced
  • 1 tbsp tomato paste
  • 1/2 cup milk
  • 3 1/2 cups chicken stock
  • 1/8 tsp allspice
  • 1/8 tsp nutmeg
  • 1/4 tsp ginger
  • 1 tsp cinnamon
  • 1/2 tsp salt

Directions:

  1. Cut squash into chunks. In water, boil squash and onion about 25 minutes.
  2. Transfer to a blender and blend until smooth.
  3. Put back on stove and add rest of ingredients. Simmer until heated through.
