Spiced Beets And Carrots

This is a great side dish that is loaded with great flavors. Enjoy
Ingredients:
1 pound fresh beets
1 pound carrots sliced
2 tablespoons grated fresh gingerroot
1/2 cup brown sugar
1/2 cup orange juice
1/4 cup cider vinegar
grated zest of 1 orange
1/2 teaspoon ground cinnamon
1/2 teaspoon mace
Directions:
1. Wash beets well and cut off leaves leaving an inch or so of stem.
2. Cover with cold water then bring to a boil and simmer covered until tender about 40 minutes.
3. Drain and cover with cool or lukewarm water and when cool enough to handle slip off skins.
4. Cut beets into slices or chunks then peel and cut carrots in slices or chunks same size as beets.
5. Steam or boil in lightly salted water 5 minutes or until tender but not soft then drain well.
6. Combine ginger, sugar, juice, vinegar, zest and spices in saucepan and bring to a simmer.
7. Cook until thickened then simmer cooked beets and carrots in sauce for 5 minutes.
