Worthy of a feast. This will keep several days after baking if refrigerated. Obviously the time required does not include the marinating time in the fridge. This is a long time commitment but it is fantastic and can be used for several different occasions.
Ingredients:
5 pounds sirloin tip roast, trimmed and deboned.
1/4 cup salt
1/8 pound brown sugar
1/4 teaspoon nutmeg
1/4 tablespoon ground cloves
1/4 tablespoon ground mace
1/4 tablespoon ground pepper
1/4 tablespoon basil leaves
1/4 tablespoon marjoram
Directions:
1. Trim the roast if it has not already been done. (Usually you can have the butcher do that for you at no charge) Remove any fat or gristle.
2. Combine spices and rub well into the meat, poking the mixture into any crevices or pockets.
3. Wrap in clean cheese cloth. Place in large glass container and cover tightly.
4. Refrigerate for 7 to 10 days. Turn meat and soak the cheesecloth with pan juices every day.
5. Bake in roasting pan at 325 degrees for 12 minutes per pound for rare. Use meat thermometer to scale it to more done if you prefer it that way..
6. Slice thin for serving.
