Sweet bread that I made when I was in high school. Very lovely with the crunch topping.
Ingredients:
1/4 cup pecans, chopped
1/4 cup brown sugar
1/2 teaspoon cinnamon
1 1/2 cups applesauce
1 cup sugar
1/2 cup vegetable oil
2 eggs
3 tablespoons milk
2 cups flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon allspice
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 cup pecans, chopped
Directions:
1. Preheat oven to 350 degrees F.
2. Generously grease two 7x3x2-inch loaf pans.
3. In a small bowl, combine topping ingredients; set aside.
4. In a medium bowl, combine applesauce, sugar, vegetable oil, eggs, and milk; set aside.
5. In a small bowl, sift flour, baking soda, baking powder, salt, allspice, cinnamon, and nutmeg.
6. Add the dry ingredients (does not include topping) to the applesauce mixture; beat well.
7. Fold in pecans.
8. Pour this mixture evenly into the two prepared pans.
9. Sprinkle topping evenly over the two loaf pans.
10. Bake 45 to 50 minutes or until a toothpick inserted in the center comes out clean.
11. Cool prior to slicing.
