In searching for a 'good hamburger recipe,' I found a few different ones that I've taken elements from and combined with what I recall from my mother's blend. They are juicy, hold together well, and have a mild heat to them that can be made to taste by adjusting the cayenne.
Ingredients:
1 egg, beaten
1/3 cup barbeque sauce
1 1/2 tablespoons worcestershire sauce
1/2 teaspoon cayenne pepper, or to taste
1/2 teaspoon garlic powder
1/4 teaspoon ground black pepper
1 1/2 pounds lean ground beef
1/3 onion, minced
1/2 cup bread crumbs
1/3 cup light sour cream, or as needed
Directions:
1. Preheat an outdoor grill for medium-high heat and lightly oil the grate.
2. Whisk egg, barbeque sauce, Worcestershire sauce, cayenne pepper, garlic powder, and black pepper together in a large bowl; add ground beef and mix well. Mix bread crumbs and minced onion into the ground beef mixture. Scoop sour cream into the beef mixture by the spoonful; continue mixing and adding sour cream just until moist. Form mixture into 6 large patties.
3. Cook the patties until they are very firm, hot, and grey in the center, 6 to 8 minutes per side. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).
