This is the first time I used a cedar plank for cooking fish - and this is the best way to grill salmon as far as we're concerned (also lower fat too) - the salmon came out so moist and spiced just right - the fish doesn't taste spicy at all. Recipe source: local newspaper.
Ingredients:
2 tablespoons paprika
2 teaspoons brown sugar
1 teaspoon kosher salt
1/2 teaspoon pepper
1/2 teaspoon ground ginger
1/2 teaspoon ground cardamom
1/2 teaspoon ground cumin
1/4 teaspoon ground cloves
1/4 teaspoon ground cinnamon
1/4 teaspoon cayenne pepper
4 (6 ounce) salmon fillets (i used 1 whole piece of salmon rather than the 4 small fillets)
Directions:
1. Soak cedar grilling plank for one hour.
2. Prepare grill.
3. To prepare the rub, combine all ingredients in a small cup or bowl.
4. Rub mixture on the top of the salmon.
5. Place plank on grill, close grill for a few minutes and then place salmon, skin side down, on the plank.
6. Cook covered, for 10 minutes or until salmon flakes.
