Speed-Cooking Spinach & Feta Pizza for One

I've been doing a lot of rush-hour cooking lately and decided to share some of what I've been making while in a hurry. I've been making batches of Easy 30-Minute Pizza Dough II because I get about three 8 crusts out of it. You can use that dough or a different kind you like, packaged, etc. My favorite pizza sauce is Enrico's Natural Pizza Sauce, use your favorite kind. The key here is really putting the spinach on first to cut down on cheese and increasing the low-calorie nutrient-dense food on a protein-rich crust.
Ingredients:
8 inches pizza crusts
3 tablespoons tomato sauce
1 1/2 cups fresh spinach leaves
1/4 cup reduced-fat mozzarella cheese, shredded
2 tablespoons feta cheese, shredded (or crumbled)
1 teaspoon oregano
Directions:
1. Thaw out, prebake, etc. the pizza crust in whatever manner you have to do; then press into a greased 8 pie pan.
2. Spread the tomato sauce onto the crust.
3. Put the spinach onto the sauce, sure not to put too much in the middle.
4. Sprinkle with the cheeses and oregano. This part may be tough because fresh spinach is kinda bouncy, but it will deflate upon baking in the oven.
5. Bake for 12-15 minutes at 400F, then slice and enjoy.
