A vegan oatmeal cookie. Healthier than your average oatmeal cookie, yet still nice and soft.
Ingredients:
1 1/2 cups whole wheat flour
1 cup rolled oats
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 tablespoon cinnamon
1/3 cup virgin olive oil
4 teaspoons cornstarch
1/2 cup soymilk
3/4 cup sugar
1 teaspoon vanilla extract
3/4 cup raisins
Directions:
1. Mix all ingredients together, adding the rasiens last.
2. Form into cookie shapes on a non-stick pan.
3. Bake at 350 degrees for about 10 minutes.
