Special K's Ham and Pineapple Sauce

A very dear co-worker from the past, Linda Kay (Special K as we fondly called her), told me about this one day and I scratched it on a sticky note to try. It is very quick and easy but still full of flavor.
Ingredients:
3 slices smoked ham, fully cooked (about 3 pounds)
20 ounces pineapple slices, drain and save juices
2 teaspoons mustard
1 teaspoon cider vinegar
3/4 cup brown sugar, loosely packed
Directions:
1. Pre-heat oven to 325°
2. Place ham slices in a dish and top with pineapple slices.
3. Bake at 325° for 15 minutes.
4. Meanwhile, mix pineapple juice, mustard, vinegar and brown sugar (I just remove the pineapple slices from the can and place on top of the ham and keep the juices in the can, then mix everything right in the can with my wisk).
5. Pour on top of ham and pineapple and return to oven.
6. Bake for 15 minutes.
