Sparkling Pineapple Ring

Ingredients:
1 (20 ounce) can chunk pineapple
1 (6 ounce) package lemon jell-o gelatin
1 cup boiling water
2 tablespoons lemon juice
1/3 cup pineapple syrup
1 1/2 cups chilled ginger ale or 1 1/2 cups champagne
1 small banana, sliced
1/2 cup sliced strawberry
3/4 cup mayonnaise
1 tablespoon honey
1/4 cup flaked coconut (rinsed with cold water and drained)
1 tablespoon lemon juice
3/4 teaspoon lemon zest
Directions:
1. TIP: Use a ring mold or a pretty glass bowl.
2. Dissolve Jell-O in water; add lemon juice and pineapple syrup. Cool to room temperature.
3. Stir in gingerale or champagne. Chill until thick.
4. Fold in fruit. Chill until serving time.
5. Mix the ingredients together for the Coconut Dressing and chill until serving time.
