This is the very popular and simple spanish tortilla
Ingredients:
• 6 medium potatoes (slice them with a mandolin like 1/4 on an inch
• 2 small onions (in julienne)
• in large green pepper (cut in julienne)
• 1/2 teaspoon salt , plus 1/2 teaspoon of pepper
• olive oil
• 6 eggs

2. Note: The frying pan has to be NON-STICKY, otherwise it will be a very sticky mess.
3. In a medium bowl mix the potatoes, onions and peppers
4. Fry the potatoes and onions on medium until they are (light golden). Remove from the stove and drain off any excess oil.
5. Meanwhile break the eggs into a medium bowl and whisk well.. Add the potatoes and onions to the eggs and mix until fully mixed.
6. Clean the frying pan and return to stove.
7. Heat t 2 tablespoons of oil on a high heat and pour in the mixture, try to pour the mix evenly. Cook at medium heat for the first three minutes then turn down the heat to allow the inside to cook.
8. When it's cooked place a large plate over the frying pan and flip the tortilla onto it. Return to the pan and fry the other side until golden brown.
9. Eat it with roasted red peppers. Buen Provecho!
